Menu Monday

Menu Monday is designed to put out great recipes to inspire our readers with weekly meal planning.  This week we have a no fuss recipe that can be made quickly for a great meal any night of the week.  Enjoy!

Swiss Cheese Chicken

2 lb boneless, skinless chicken breasts

1 jar marinated artichokes, halved

1 jar mushrooms

6 slices Swiss cheese

1 can cream of chicken soup

1 cup chicken broth

1 package stuffing mix

1 stick melted butter

Directions

Preheat oven to 350 degrees.  Coat 9 by 13 baking pan with cooking spray.  Arrange chicken in pan.  Top with artichokes and mushrooms.  Layer with cheese.  Combine soup with chicken broth.  Pour over chicken.  Top with stuffing mix.  Drizzle with butter.  Cover pan with aluminum foil; bake for about 45 minutes, or until chicken is cooked through.  Uncover pan for last 5 minutes.
